This syrup is sweet, spicy, and absolutely delicious. It can be used as a base for ginger soda or a variety of bourbon, whiskey, and rum cocktails. It would also be delicious drizzled over fresh fruit or stirred into your morning coffee. Enjoy!
10 oz ginger
2 cups granulated sugar
4 cups (1 liter) water
Start by thoroughly washing the ginger. Then cut into rough, thin slices. Now, combine the granulated sugar, water, and ginger in a saucepan and bring to a boil. Once boiling, reduce the heat and allow to simmer for 45 minutes. Remove the syrup from the heat, strain into a bowl, and allow it to cool completely. Store in an air container, in the refrigerator, for up to 3 weeks.
