In this video, I show you how to make my BLUEBERRY-LEMON HAND PIES. Basically, they’re my take on the Pop-Tart. Eat ’em with a fork or pick ’em up with your hand…either way, these little pocket-size pies will change your life forever. An exaggeration you say? Find out for yourself!

There you have it…my BLUEBERRY-LEMON HAND PIES. When you take that first bite, you’ll taste the sweet tang of the lemon glaze, followed by the rich, flaky and buttery pâte brisée, and finally the slightly-sweet blueberry filling. If you ask me, they’re pure perfection and perfect as a summer breakfast on the patio.
2 1/2 cups all purpose flour
1 teaspoon Kosher Salt
1 Tablespoon granulated sugar
8 ounces unsalted butter
1/4 – 1/2 cup water, iced
2 cups blueberries, fresh or frozen
Water (enough to cover the blueberries)
1/2 cup granulated sugar
1/4 lemon, zested
2 Tablespoon corn starch
2 Tablespoons water, for corn starch slurry
2 Tablespoons heavy cream
3 cups powdered sugar
1 lemon, zested
1 lemon, juiced
3-6 Tablespoons heavy cream
