There you have it…my BLUEBERRY-LEMON HAND PIES. When you take that first bite, you’ll taste the sweet tang of the lemon glaze, followed by the rich, flaky and buttery pâte brisée, and finally the slightly-sweet blueberry filling. If you ask me, they’re pure perfection and perfect as a summer breakfast on the patio.


Pâte Brisée

2 1/2 cups all purpose flour

1 teaspoon Kosher Salt

1 Tablespoon granulated sugar

8 ounces unsalted butter

1/4 – 1/2 cup water, iced

Blueberry Filling

2 cups blueberries, fresh or frozen

Water (enough to cover the blueberries)

1/2 cup granulated sugar

1/4 lemon, zested

2 Tablespoon corn starch

2 Tablespoons water, for corn starch slurry

Egg Wash

2 eggs

2 Tablespoons heavy cream

Lemon Glaze

3 cups powdered sugar

1 lemon, zested

1 lemon, juiced

3-6 Tablespoons heavy cream
